Rosemary (Rosmarinus Officinalis) is a typical species of mediterranean flora. It is said that during the middle age rosemary would grow around monasteries. In Greece it is a native plant in many areas of the country and the islands. This plant was known from the ancient years and is referred to in the writings of Dioscourides for its properties. At the beginning of the 20th century rosemary was used in French hospitals as an antiseptic due to its remarkable antibacterial action.

The leaves of rosemary are used as seasoning in many foods. It is recognized for its antioxidant action, it protects and enhances the immune system, boosts the heart and stimulates blood circulation.
It is considered very helpful for soothing conditions of weakness, fatigue, burn out, depression, sleeplessness and anxiety, boosts the memory, the nervous system as well as concentration.
It can be used as an expectorant as it sooths cough in cases of asthma, bronchitis and flu. In recent studies it was shown that rosemary can lower glucose and cholesterol levels in blood having thus great impact in controlling body weight.
Directions: In cooking is used as a seasoning to flavor meats, fish, poultry, seafood, sauces and vegetables. It gives distinct aroma and flavour to omelets and soups.
For herbal tea. Add one teaspoon of herb per cup of hot water and steep covered, for 4-5 minutes. Strain and enjoy hot or iced, plain or add sweetener to taste.
